Inexpensive and Simple Menu Planning-Help!

Hello, one of the on-going goals for 2008 is better menu planning (nutritonally speaking, as well as financially speaking). I am not a chef and I don't like cooking (with the exception of baking and jell-O molds)

My goal is to cut down on red meat consumption (though I do 50-50 ground turkeyand 90-10 sirloin) and increase chicken and fish (once a week for each).

I am good with the crockpot (actually do OK with that) and I do buy what is on sale (lots of buy one, get one)

Are there any site or recipes that you guys could share? Thanks in advance!

    has some excellent vegetarian slow cooker dishes.

    I have quite a few meatless recipes that are very good and will post some on my blog for you.

    One of my favorite versatile foods is those rotisserie chickens that they sell at Costco (and supermarkets, but I think the Costco ones are so much tastier and bigger).

    Dark meat can be a meal on its own. I take all the white meat and store it away, to be used in something else: frittatas, quesadillas, chicken salad, etc etc etc. Then I keep the wings and bones and carcass and toss 'em into a freezer bag, ready to be made into chicken stock after two or three chickens.

    Basically, after all is said and done, I've got a good number of meals out of this chicken (without actually having to cook it), plus I never have to go buy canned chicken stock.

    I have a great crock pot chili recipe if you want it also. Just made it last night with ground turkey - it's very healthy.

    You sound like me. Baking I like, but I hate having to cook. So I find easy ways to do it. I don't use the crockpot as much as I'd like. I need more good recipes for that. I don't use fresh chicken either. I buy Tyson's frozen tenderloins (they cook faster than the chicken breasts) and their frozen cubed chicken. I also buy Publix's frozen wingettes (for some reason I like them better than Tyson's. I like the frozen because I can really stock up on it and I don't have to wait until it is thawed out to cook with it. We also eat a lot of pasta! I buy frozen vegetables (Publix brand) like chopped green peppers, chopped onions, sliced mushrooms, mixed blends, et cetera and make pasta dishes with those, the cubed chicken, some garlic and olive oil. We also use the vegetables to make stir-fry and put over rice from our rice cooker.

    I'll also use this stuff for soup. I'll make a big pot with chicken stock, a can of diced tomatoes (we use the Italian herbed ones), and then throw in whatever else we have on hand that's frozen. I really like using Publix's frozen cheese tortellini and then add chicken and vegetables.

    I'd like to learn some more recipes to round what I've got out though.

    George - please share your chili recipe, I think that is something that would go over big here.

    The chicken idea is a neat one - I could probably feed everyone with one (and I don't have to cook) and I might try to freeze the carcas as well. This sounds tasty and economical and I will check it out (though I am a Sam's shopper ;-)

    I also have a white chicken chili recipe that I haven't made in a while, so I wouldn't be able to rattle it off the top of my head. But I'll go find it if you're interested. These are great for these cold weather days we're having.
